Southwest Chicken Pasta Casserole

prep: 25 minutes | cook: 40–45 minutes | serves: 8–10 people

This is a recipe I put together one night with things I had in my freezer and pantry. It turned out really good and now it’s a favorite. I hope you enjoy! – BRENDA

Ingredients

1 pound boneless chicken breasts
1 small can green chiles
1 small can green enchilada sauce
1 can diced tomatoes with green chiles
2 + 1 tablespoon taco seasoning
1 pound cooked pasta
1 bag frozen corn or 1 can drained corn
1 can black beans (rinsed and drained)
10–12 oz shredded cheddar cheese

Instructions

  1. Preheat oven at 350°. Spray 9x13 casserole dish with non-stick spray.
  2. Cube chicken breasts and put in plastic bag.
  3. Add 2 tablespoons taco seasoning and shake to coat chicken; put in dish.
  4. Add chiles, enchilada sauce, diced tomatoes, 1 tablespoon taco seasoning, cooked pasta, corn, and black beans to dish. Stir until combined.
  5. Top with shredded cheese.
  6. Bake 40–45 min or until chicken is cooked through.
  7. Top with tortilla strips and sour cream or your favorite toppings.
