Southwest Chicken Pasta Casserole

This is a recipe I put together one night with things I had in my freezer and pantry. It turned out really good and now it’s a favorite. I hope you enjoy! – BRENDA
Ingredients
1 pound boneless chicken breasts
1 small can green chiles
1 small can green enchilada sauce
1 can diced tomatoes with green chiles
2 + 1 tablespoon taco seasoning
1 pound cooked pasta
1 bag frozen corn or 1 can drained corn
1 can black beans (rinsed and drained)
10–12 oz shredded cheddar cheese
Instructions
- Preheat oven at 350°. Spray 9x13 casserole dish with non-stick spray.
- Cube chicken breasts and put in plastic bag.
- Add 2 tablespoons taco seasoning and shake to coat chicken; put in dish.
- Add chiles, enchilada sauce, diced tomatoes, 1 tablespoon taco seasoning, cooked pasta, corn, and black beans to dish. Stir until combined.
- Top with shredded cheese.
- Bake 40–45 min or until chicken is cooked through.
- Top with tortilla strips and sour cream or your favorite toppings.
